Pho and Byron confirm contracts for Manchester Corn Exchange

Vietnamese casual dining chain Pho and burger group Byron have completed their contracts to open at the Manchester Corn Exchange.

The new opening will mark Pho's first foray into Manchester and its second site in the North of England, alongside Leeds. The chain was founded in London's Clerkenwell just over 10 years ago.

Work has commenced on fitting out the new 4,500 sq ft restaurant, which will seat more than 200 diners across three floors. The Corn Exchange site will serve the brand's signature dishes alongside Vietnamese street foods like spring and summer rolls, spicy salads, curries and wok-fried noodles for eat-in and Pho To Go, as well as beers, coffees, fresh juices and cocktails.

The new Byron restaurant will be the company's third in Manchester, with sites in Piccadilly Gardens and Deansgate. The Corn Exchange venture will serve the group's typical short and simple menu, including the Classic, Cheese, and signature Byron burgers, plus a regularly changing special. A selection of 'Classic Specials' will see some of the most popular return to the menu for good.

In addition, Byron's regularly updated craft beer list, featuring beers from around the world, will also be on offer, alongside hard shakes, classic sodas, floats and a selection of Kentucky bourbons.

In keeping with Byron's business model of creating a bespoke design for each of its sites, the Corn Exchange restaurant will be inspired by the architectural grandeur of Grand Central station.

"We're really looking forward to opening in the magnificent Corn Exchange. It's an iconic site and will be a temple to food in Manchester, so it's exciting to be part of the building's future," said Byron's founder Tom Byng.

Corn Exchange has undergone a £30m refurbishment by owners Aviva Investors Property Trust and developers Queensberry Real Estate. It will be home to 17 restaurants including several firsts for Manchester and a 114-apartment Roomzzz Aparthotel.

Other operators due to open at the venue include Wahaca, Vapiano, Eclectic Grill, the Cosy Club, Tampopo, Salvi's mozzarella bar, Banyan bar and kitchen, Cabana, Zizzi and PizzaExpress.

The first restaurants are expected to be opening in July 2015.
