What do you normally have for breakfast?
Double espresso and honey oatmeal with berries or banana

What do you do to relax?
I love photography, travel and golf, and I am looking at taking some drawing classes

Koffmann's at the Berkeley, London

What's your favourite hotel?
The Viceroy in California

What is your favourite cuisine?
Thai street food

Which person gave you the greatest inspiration?
My mom

Which ingredient do you hate the most?
Avocado

Le Figaro

Which person in catering have you most admired?
Paul Bocuse - I met him a couple of times and I am amazed by his personality and what he has done

If not yourself, who would you rather have been?
Travel photographer Yann Arthus-Bertrand

If you hadn't gone into catering, what do you think you'd be now?
I'd either be an architect or an interior designer

What's your favourite drink?
I love single malt whisky, but I drink wine most often

When and where was your last holiday?
The Florida Keys and Miami in January this year

What irritates you most about the industry?
Customers trying to get freebies

What's your favourite film?
The Godfather

Who would play you in a film about your life?
Jean Dujardin - I am often told we look alike
