Chef Dan Doherty creates recipes using Santa Maria Tellicherry black pepper

Chef Dan Doherty, of London's Duck & Waffle restaurant, has created four recipes exclusive to Santa Maria Foodservice to inspire chefs to work with Tellicherry black pepper.

Including meat, fish, and dessert options, the recipes are:

  • Tellicherry black pepper seared beef carpaccio with grelot onions, English mustard, nasturtiums and dripping croutes
  • Marinated scallops with Tellicherry black pepper, apple and sorrel
  • Tellicherry black pepper candy floss, crème fraîche, lime and roasted garlic sorbet
  • Tellicherry black pepper ice cream sandwich with salted caramel sponge

The company has also created an online pepper guide, available to download from its website, which is designed to offer chefs the inspiration and tools to help them get the most flavour and interest out of pepper.
