The Swiss-made VarioCooking Center is a multi-purpose, computer-controlled cooker combining tilting pan, kettle and deep-fat fryer that will, in conjunction with a combi-oven, cover most commercial kitchen needs.
It is said to cook up to 50% faster than conventional appliances thanks to a compressed network-like heating structure that transfers heat evenly to food, preventing it from sticking to the pan, and can raise the cooking temperature to 250°C in four minutes.
The appliance also uses 40% less energy and water and less fat than conventional appliances and reduces food shrinkage.
The VarioCooking Control removes all the routine chores. Operators simply select the type of food and the unit detects both the size of the food and the load and chooses and monitors the cooking process to tell the cook when it is time for the next stage, such as deglazing, adding ingredients or turning a steak. It will check and optimise the cooking process 3,600 times an hour.
The food-recognition system uses new designs of core temperature probes, water drain systems and automatic raising and lowering technology for accurately cooking pasta, poached and deep-fried foods.
Accessories include dedicated baskets and carts for special foods, stands with a pull-out tray for gastronorm containers, a Vitro Ceran plate for small loads, a marine version, Ethernet interface, and connection to energy-optimising systems.
There are three VarioCooking Centers, each with a pressure-cooking option, with working capacities of 2 x 14 litres, 100 litres and 150 litres.
