Ethical restaurant the Savannah to open in Euston
A bar and restaurant that claims to be one of London's most ethical and eco-friendly spaces is to open in Euston this week.
The Savannah in the Wesley hotel on Euston Street will offer a fusion of European, African and Asian flavours.
Head chef Alin Lucian Atanasiu will prepare dishes such as African spiced pork belly with scallop, carrot and miso purée, prawn tempura with spicy tomato fondue on a banana leaf, and pan-fried duck breast with bok choy, crushed sweet potatoes, plum and baobab sauce using meat sourced from Old Hall Farm near Luton and non-endangered fish from James Knight of Mayfair.
The 54-cover restaurant and 80-cover bar features silhouettes created by British designer Stephanie Cole and a bird of prey made from recycled shopping trolleys by eco-friendly artist Ptolemy Erlington. Most of the furniture is made from recycled material, while the space features a lighting system which creates different moods depending on the time of day.
The Wesley hotel is named after the founder of the Methodist Church, John Wesley. It aims to support social transformation, social enterprise and ethical principles.
