Papaya soup

Ingredients

570g papaya (young Hawaiian type for better flavour)
Fresh lime juice to taste
120ml Sauternes wine
Sugar to taste
Mineral water

Method

Blend papaya Sauternes wine and sugar until smooth.

Strain and check flavour. Adjust with lime juice sugar and Sauternes wine.

Keep refrigerated.
