Yam Woonsen
Glass noodle salad
INGREDIENTS
(Serves two)
100g glass noodles (bean paste vermicelli)
20g woodear mushrooms
20g mushrooms sliced
20g shallots sliced
1 tomato seeded and shredded
10g spring onion chopped
15g celery leaves
For the dressing
10g red chillies diced
10g caster sugar
20ml ripe lime juice
20ml nam pla(fish sauce)
20g coriander roots finely diced
10g garlic finely diced
METHOD
Soak the noodles and woodear mushrooms in water for 30 minutes. Drain and transfer to a mixing bowl. Blanch and drain the mushrooms and add to the noodles together with the rest of the salad ingredients. Combine all the ingredients for the dressing. Toss the noodles in the dressing and serve in Thai bowls.
