Bill's restaurant to open at Westfield London
Bill's restaurant is set to open its first restaurant inside a shopping centre, at Westfield London in the spring.
The 184-cover outlet will be the latest new opening for the burgeoning chain of casual dining restaurants, which currently number 16 across London and the south of England.
The Westfield restaurant will be located on the Southern Terrace alongside Gourmet Burger Kitchen and Le Pain Quotidien. It will provide over 50 new jobs and 80% of the materials used in design will be recycled, including wood flooring, reclaimed bricks, old scaffold planks and vintage lighting.
Last year Westfield London attracted more than 27m shoppers and £962m in sales, alongside seven million food and beverage transactions.
Bill Giouroukos, Westfield's director of operations, said: "We are thrilled Bill's is opening its first restaurant inside a shopping centre at Westfield London adding to our great line up of star restaurants including Jamie's Italian and The Meat and Wine Company. Leisure is a key driver of footfall and dwell time and we have worked hard to create the ultimate shopping and leisure experience for our customers."
Founder of the chain, Bill Collison, said the informal menu and friendly atmosphere of Bill's will be a good match for Westfield's shopping-district buzz.
"The restaurant will be open for breakfast, lunch, tea and dinner," he explained.
"In the evening, we light the candles and it's a really nice place to wind down with drinks or for supper. Our ethos couldn't be simpler; we aim to look after our customers well, and serve them great seasonal dishes at good prices. That's why our customers come back time and again."
