Japanese restaurant Wabi to open in Lincoln's Inn Fields
Sussex-based Japanese restaurant Wabi is to come to London, with the opening of a restaurant in Lincoln's Inn Fields this autumn.
The restaurant, owned by entrepreneur André Cachia, will be overseen by head chef Scott Hallsworth, who worked at Nobu for six years and launched the original Wabi in Horsham in 2010.
Set to open in October, Wabi London will feature a central theatre kitchen, as well as a sushi bar headed up by another former Nobu chef, Taiji Maruyama, and a pastry bar where desserts will be served.
Hallsworth's signature dishes will include foie gras martini with umeshu jelly, nashi and black vinegar; onsen egg with dashi-soy, truffle salt and chives; and tea-smoked duck tataki with burnt ginger amazu sauce.
Dishes at the sushi bar will include butter poached Spanish red shrimp with yuzu, chilli and cucumber dressing, while desserts will feature iced yuzu nougat parfait with green apple sorbet and warm white chocolate.
Wabi London will also have a bar overseen by Rocco Catalano, who previously worked at Maze, Buddha Bar, Electric House, Nobu and the Fifth Floor Bar at Harvey Nichols.
