Simon Rogan has opened this fine-dining restaurant at Manchester's Midland hotel. The menu is focused on ingredients from the North West with dishes in the style of his two-Michelin-starred L'Enclume restaurant. A second restaurant will open at the hotel in summer.

Typical dishes artichoke broth with truffle dumplings, bacon, radish and hazelnut; fresh crab, caramelised cabbage, horseradish, chicken skin and crow garlic; studded Cumbrian rose veal, blewits, split pea, sorrel and beetroot; pear, meadowsweet, rye, buttermilk and linseeds.
