Recipe: Pineapple foam and carrot juice tequila cocktail
A two-toned cocktail combines fruit and vegetable for an agave medley spiked with tequila
A pineapple nitro-foam sits on top of a carrot-coloured drink for what Manolo in Liverpool calls the 'Roots of Agave' cocktail.

Pineapple foam
- 500ml cold-pressed pineapple
- 100ml egg whites
- 50ml gomme
Combine the ingredients and charge with two nitro cartridges in an ISO canister. Store the foam in the fridge.
To make the cocktail
- 1oz lime juice
- 0.5oz agave
- 1.5oz Patrón Silver Tequila
- 1oz cold-pressed carrot juice
- Pineapple foam
Shake all the ingredients except the pineapple foam over ice and strain into a long-stemmed wine glass. Top with two inches of pineapple foam and serve.
