Former Rosewood London staff open new Bone Bar Lab pop-up

Two former staff at the Rosewood London, Bjorn Van Der Horst and Omar Romero, have opened a new bone broth pop-up bar and restaurant called the Broth Bar Lab, in West London.
The 30-cover restaurant at 209 Westbourne Grove comes from the Bone Tea group, which was founded this year by the duo. They first worked together when they were respectively director of food, beverage and kitchens; and executive chef, at the Rosewood London hotel, Holborn.
Open Monday to Thursday from 5pm until late, the pop-up is located in the Bumpkin store, and will be open until 31 October. It offers a selection of four broths: beef, pork, chicken and mushroom, costing from £3.50 to £4.50, each served with bread and condiments.
The site is designed to act as a "test lab" to gauge the public's reception of broths, with a view to opening more shops later in the year should it prove successful.
It also has small menu of dishes using the products that will eventually go into making the broth, such as meat marmalade, Bone Tea glazed chicken wings, pulled pork or beef bun, and Bone Tea fruit scones with clotted cream, and the site also has a license to sell wine, including two red and white apiece, plus one rosé, one sweet, and one sparkling, plus whiskey and Mezcal.
Aiming to be sustainable, the Broth Bar Lab also uses compostable packaging Vegware, which is made from plants instead of plastic, and can be recycled along with food waste.
