Mark Jones has joined the Merchants bar & restaurant, housed inside the Grade I-listed boutique hotel 62 Castle Street in Liverpool, as head chef. He joins with more than 25 years experience that includes stints at the Sydney Opera House and the Lanesborough hotel in Hyde Park, London.
