The energy-saving Accutemp Steam'n'Hold oven has been joined by a half-size model, while the existing unit has been upgraded. The ovens, which do not require water or drainage connections, combine the benefits of steam cooking and cooking in a vacuum by lowering the pressure to generate steam below 100¡C. This cooks food at lower temperatures to preserve texture, flavour and colour and means that even the full-size unit uses just 22 litres of water a day compared with more than 120 litres of water an hour in plumbed-in steamers and combi-ovens. As food fibres are not damaged, cooked food can be held ready to serve for several hours.
The new S3 half-size model can accommodate three full-size gastronorm 1/1 pans (along with one-third and half-size pans) while its larger sibling, the S6, will take six pans. Both versions are available in one- or three-phase power versions and can be supplied with or without electronic temperature control.
