The IFR (Intelligent Food Recognition) system used on the Angelo Po line of blast chillers has won the range the Kitchen Innovation Award 2007 from the USA's National Restaurant Association.
This system prevents the surface of the food from freezing - thus preserving its taste and fragrance - by modulating the power during the chilling process with the aid of a multipoint probe whose three points monitor the temperature in the core, beneath the surface and on the surface of the food.
The blast chiller line-up includes models for every size of kitchen, ranging from a 3 x 1/1 gastronorm model to a 40 x 1/1 gastronorm unit that will take the trolley straight from the combi-oven.
The blast chillers, which range in price from £3,000 to £20,000, are made to allow a combi-oven to sit on top or to sit on top of a combi-oven to save space.
